A mum has revealed how she reuses  leftover sandwich crusts and transforms them into sweet treats perfect for school lunchboxes. 

Irish mum, Ciara Attwell, founder of ‘My Fussy Eater’, uses crusts to create fruit scrolls with only a couple of ingredients. 

To create the simple scrolls Ciara first removes the crusts from a slice of bread and selects her favourite fruit flavoured jam.

A mum has shared how to reuse leftover sandwich crusts and how she transforms them into fruit scrolls with only a couple of ingredients

The mum then spreads her fruit jam onto the inside of the crusts, making sure to cover all areas.

Once the jam has been spread she begins rolling up the crust to resemble a pin wheel or cinnamon scroll formation. 

She then stabs a skewer into the base of the scroll and applies a small amount of butter to the top of each scroll.

Ciara then places the scrolls onto a tray lined with baking paper or foil and places them into the oven on 180 degrees for 10 minutes. 

Once out of the oven the fruit scrolls should be toasted and delicious, ready for lunchboxes or as an afternoon snack.

Ciara’s simple recipe is a great way to use leftover crusts and is completely customisable, with Nutella, cinnamon and even Vegemite worthy additions.
