Top Sydney chef Mitch Orr has created a mouthwatering katsu curry using KFC’s iconic crumbed chicken fillets.

The recipe transforms the traditional katsu curry and updates the dish with the fast food chain’s Zinger fillets and signature chips for the perfect winter meal.

To make the dish at home you’ll need KFC zinger fillets, large chips, Golden Curry Medium Curry Paste, white soy sauce, Kombu Tsuyu, white onion, granny smith apple, garlic, ginger, sesame oil and Japanese short gain rice.

The end result looks delicious and the recipe can serve up to six people, which is perfect for larger families.

The zinger katsu curry is the latest installment of this year’s Kentucky Fried Cookin’ series, which sees KFC partner with Aussie chefs and foodies to make unique dishes for fans to get creative in the kitchen. 

Mitch demonstrated how foodies can make the dish at home in a step-by-step video posted on YouTube.

He begins by sautéing the onion, garlic and ginger in sesame oil in a heavy-based pot over a high heat on the stove and cooks until fragmented.

Next, he adds the granny smith apple and cooks until soft.

‘We’re adding apple for a bit of sweetness and freshness, which will lighten and lift the curry sauce up,’ Mitch said in the video.

Ingredients: – serves six

1 x KFC Zinger fillet per person (yep, that’s right you can order just the fillets over the counter)

1 x KFC large chips

1/2 packet Golden Curry Medium Curry Paste

White soy sauce

Kombu Tsuyu

1 x small white onion, finely diced

1 x Granny smith apple, peeled and grated

4 x cloves of garlic, finely diced

1 x knob of ginger, finely grated

650ml water

Sesame oil

Cooked Japanese short grain rice 

Method:

In a large heavy-based pot over a medium heat, saute the onion, garlic and ginger in sesame oil until softened and fragrant.

Add grated granny smith apple and cook until soft.

Add water and curry paste.

Stir thoroughly and simmer for 5 mins, continue stirring until the paste dissolves and the sauce thickens. It should be glossy and smooth.

Season with Kombu Tsuyu and white soy sauce.

To serve, place rice and KFC chips in a bowl, slice the KFC Zinger Fillet and add to the top. Spoon over curry sauce.

Garnish with sesame seeds, scallions and pickled ginger.

Turning the heat on low, 650mL of water was then added to the pot along with curry paste, which was simmered for five minutes.

After stirring the mixture through for a couple of minutes this should form a glossy, smooth but thick sauce.

To add the kick of flavour, the sauce was seasoned with Kombu Tsuyu and white soy sauce.

The plate was then prepared with the cooked Japanese rice on the bottom and topped with the KFC zinger fillets, chips and curry sauce.
